The Best Overnight Oats are a healthy, filling, make-ahead breakfast for those busy mornings when you need delicious nutrition fast.

During the summer months, I would visit my Bubby at her bungalow colony in the Catskills. Every morning, she served big bowls of oatmeal filled with cinnamon and blueberries. Blueberries, wild and sweet, picked fresh from the big, rambling bush outside. The oatmeal, cooked in an ancient pot on the antiquated stove, and the bowls laid out on a floral vinyl tablecloth. It was a luxury breakfast, a slow morning before a busy day of chores.

It was our time, our special breakfast.

All grown up and far from the bungalow colony, I still love blueberries and cinnamon over oatmeal. Though our blueberry bushes are still reaching maturity, our summer berry patches burst with raspberries, blackberries, and strawberries all summer long. When we have a surplus (and my children don’t gobble them all up) I freeze the berries and save them to top my weekend oatmeal.

For busy summer mornings when I don’t want a hot breakfast, I have adapted my oatmeal tradition to the hustle-bustle life of work, camp, and the hungry bunch that goes with it. The Best Overnight Oats are a versatile way to feed my family quickly and nutritiously. My overnight oats recipe creates perfectly individual portions, blended with oats, thick yogurt and milk.

I love using skyr, which is the Icelandic version of Greek yogurt because it’s creamy and packed with protein but slightly looser than Greek yogurt.

The blueberries and strawberries add a burst of fresh flavor. Feel free to use nectarines, peaches, or whatever fruit you love. My overnight oats recipe is filled with pumpkin seeds and chia seeds contribute balanced fiber and protein that keeps me and family satisfied and full. The final flourishes of coconut flakes and maple syrup give this hearty breakfast a little gourmet sweetness.

The Best Overnight Oats take minutes to assemble and are the perfect grab-and-go meal. Pile each jar high with your choice of accouterments, including fresh fruit, cocoa nibs, nuts, and even a drizzle of honey. Warm them slightly or eat them cold, overnight oats are the perfect way to begin your day!

Ingredients

  • ½ cup oats
  • 1 tablespoon chia seeds
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon shredded coconut flakes
  • Small dash kosher salt
  • Sprinkle of cinnamon
  • 5-8 frozen or fresh raspberries or blueberries or fruit of choice
  • ½ teaspoon maple syrup
  • ¼ cup plain greek yogurt or skyr
  • ½ cup milk
  • ½ teaspoon vanilla extract

Instructions

  • Fill an 8 oz. jar (that has a tight fitting lid) with oats, chia seeds, pumpkin seeds, coconut flakes, small dash of kosher salt, and a light sprinkle of cinnamon. Stir to combine.
  • Add in the blueberries, maple syrup, greek yogurt, milk and vanilla extract.
  • Stir well to combine until all ingredients are fully incorporated and submerged in milk.
  • Tightly close the jar with a lid and let the oats rest in the fridge overnight. They will keep well for 2-3 days.
  • To serve, pile the top of each jar with your choice of fruit, seeds, nuts and perhaps a drizzle of honey or cocoa nibs! The more the merrier!
