Ingredients
½cupoats
1tablespoonchia seeds
1tablespoonpumpkin seeds
1tablespoonshredded coconut flakes
Small dash kosher salt
Sprinkle of cinnamon
5-8frozen or fresh raspberries or blueberriesor fruit of choice
½teaspoonmaple syrup
¼cupplain greek yogurt or skyr
½cupmilk
½teaspoonvanilla extract
Instructions
Fill an 8 oz. jar (that has a tight fitting lid) with oats, chia seeds, pumpkin seeds, coconut flakes, small dash of kosher salt, and a light sprinkle of cinnamon. Stir to combine.
Add in the blueberries, maple syrup, greek yogurt, milk and vanilla extract.
Stir well to combine until all ingredients are fully incorporated and submerged in milk.
Tightly close the jar with a lid and let the oats rest in the fridge overnight. They will keep well for 2-3 days.
To serve, pile the top of each jar with your choice of fruit, seeds, nuts and perhaps a drizzle of honey or cocoa nibs! The more the merrier!
