I almost missed it.
That little note on the calendar for this Sunday. Not my daughter’s watercolor class or the list of to-do’s I have scribbled down. It’s day light savings; the official welcome into dark season.
Some people fear dark season, but I lean into it. The firewood is already stacked inside, waiting for the first all-day crackling hearth session. I have unleashed my entire stash of tall warm boot socks. Most importantly, I have brought out the big soup pots. They have been living in stand by mode for the past few weeks.
Let’s rebrand dark season as cozy season…as soup season.
My 5 Top Soup Recipes!
These 5 soup recipes are the ones I make on repeat from now until May. 4 out of the 5 of these soups are hearty meal soups; one pot wonders that are fully nutritionally balanced. All you need is a bowl and supper is served!
1.Hearty Minestrone Soup:
